Salmon&Broccoli

Okey so let's talk about healthy. We have a wedding coming up and I try (put as much emphasis on the word try as you can) to .. well look good on the day. Healthy doesn't always meen quick, easy or yummy to be honest. But with this, ooooh boy with this salmon, you have something to satisfy your taste buds and still keep on your diet. So let's cut the chit chat and get to the real deal..

Preparation time: 5 minutes
Oven time: 20-30 minutes


Okey the picture is not best ever, but trust me this stuff is delicious!

So what do you need:

Salmon fillet (for two we have 470g and it still gives leftovers for next day)
Broccoli (fun thing, both frozen and fresh stuff work on this amazingly!)
50g Cream cheese (with herbs preferably)
3/4 cup grated parmesan cheese
3/4 cup breadcrumbs

Take a casserole tin, pan or whatever you can put to your oven. Take the salmon fillet and if it has still skin on, put the skin side downwards. Spread cream cheese evenly on top of the fish. Put the pieces of broccoli around the salmon and top them with breadcrumbs and parmesan cheese. Bake in the oven in 392 degrees, for about 20-30 minutes. Check the salmon so it is flaky but done from the middle also. 

Next you can just scrape some salmon and some broccoli on your plate, and enjoy that warm supersimple comfort food of yours. Told you it would be easy.
